Quick Recipe...30 Minute Dinner Rolls

Hey everyone! From time to time I share a recipe here and love to share the especially easy ones. My time is limited and sometimes I need something quick and simple to throw together in a pinch.
Well, in looking for a quick dinner roll recipe, I came upon this goodie. 30 Minute Dinner Rolls. Ooooooo...I was VERY excited and they turned out fabulous and really did only take about 1/2 hour!!! So, without further ado, here is the recipe!

30-minute Dinner Rolls
1 cup + 2 TB warm water
1/3 cup vegetable oil
2 TB active dry yeast (I used rapid rise yeast and it worked very well too)
1/4 cup sugar
1/2 tsp salt
1 egg
3 1/2 cups flour

Preheat oven to 400F. Mix water, oil, yeast, and sugar together in the bowl of an electric mixer and let it rest for 15 minutes. Add the salt and egg, mix thoroughly. Gradually add the flour. Divide into 12 equal pieces, and shape into round balls. Place onto a greased baking sheet (I used a well-buttered cookie sheet) or silipat and let it rise for 10-15 minutes. Bake 10 minutes or until golden brown.
**I rubbed a stick of butter over the tops of the hot rolls as soon as they came out of the oven...it just adds a touch of yumminess and also, keeps them soft.

These rolls are filling and just right to go with any dish. I definitely will be making them again! Let me know if you made them and how they turned out...enjoy!! :)

Produce For Kids & Price Chopper Launch Get Healthy, Give Hope Campaign

Last year I posted about Produce for Kids and their Get Healthy, Give Hope Campaign and I am pleased to announce that it is once again time for this fantastic campaign! My children have a problem eating healthy (as do many children I know) and I am constantly on the lookout for fun and exciting ways to get them to eat better. When I first met Produce for Kids, I was overwhelmed with their commitment to nutrition for kids and have kept in touch with them ever since. On their website you can find recipes and fun ideas to get your children in some better eating patterns and I for one have enjoyed the experience of finding new ways to prepare simple foods. Produce for Kids is launching its annual Get Healthy, Give Hope campaign with major supermarket chains across the country, including your local Price Chopper store, to help raise money for Children’s Miracle Network Hospitals and Children's Hospital at Dartmouth this Sunday. Beginning June 16th, the joint campaign will run through July 27th and will help raise money for children in need. The more produce Price Chopper shoppers add to their shopping lists, the more hope they can give to local children. All participating fresh fruit and vegetable suppliers at Price Chopper stores will make a consumption-based donation to local Children’s Miracle Network Hospitals.

To learn more about the campaign, shoppers can visit the Produce for Kids in-store display which features easy-to-prepare recipes, helpful materials with additional information on the campaign and links to visit more than 90 easy Ideal Meals® recipes online. The display also features characters from the popular Sprout® health-focused children’s series “LazyTown™” and “The Chica Show,” along with tips on healthy eating for kids.

Here are some of the recipes that Produce for Kids offers...

Banana Fro-Yo

Serves 4
Preparation Time: 30 minutes
Ingredients:
·   2 bananas, peeled, chopped
·   3 cups lowfat yogurt
·   1 cup pineapple, cored, chopped
·   ¼ cup caramel dip
Directions:
1. Place bananas in freezer bag and freeze overnight.
2. Blend bananas, yougurt and pineapple in blender until thick and smooth.
3. Portion and freeze for 25 minutes.  
4. Drizzle with caramel dip and serve.

Smoothie Pops & Super Cereal Mix
Serves 16
Preparation Time: 20 minutes
Ingredients:
·   1 large peach or mango, peeled, chopped
·   1 large nectarine, peeled, chopped
·   2 medium bananas, peeled, sliced
·   1 cup strawberries, leaves hulled
·   1 cup blueberries
·   ¼ cup orange or fruit juice
·   2 cups low-fat vanilla yogurt
·   16 paper cups
Directions:
1. Place all smoothie ingredients in a blender and blend until just smooth.
2. Place 16 paper cups on a baking tray.  Pour smoothie into paper cups.  Place tray in freezer and freeze until slushy, about 20 minutes.
3. Remove tray from freezer and insert one popsicle stick into the center of each cup.  Return to freezer and freeze until firm, about 2 hours.
4. Tear away paper cup and place on plate.
Serves 4
Preparation Time:
Ingredients:
·   1 cup toasted oat rings cereal
·   1 cup round corn puffs cereal
·   ½ cup round colored corn puffs cereal
·   ½ cup roasted, unsalted peanuts
Directions:
1. Combine all cereal mix ingredients in a large bowl.

Super Green Smoothie
Serves 4
Preparation Time: 10 Minutes
Ingredients:
·   2 cups 1% milk
·   1 banana, peeled, cut in half
·   ½ avocado, pitted, peeled
·   1 cup spinach, gently packed
·   1 cup green apple, cored, chopped
·   3 Tbsp. ground flax seed
·   2 Tbsp. honey
Directions:
1. Blend milk, banana, avocado, spinach, apple, flax seed and honey in blender until smooth.

A Weekend Project...Dandelion Jelly!


I have never considered myself to be very adventurous in the kitchen however, I was recently inspired. Back when I had just given birth to Jacob, a family in my church brought over a delicious meal and in that meal was a jar of Dandelion Jelly. I had never heard of Dandelion Jelly before and was mesmerized by this little jar of sweet, golden colored jelly. When I tried it, I was addicted...and the jar lasted maybe a day. It was that good!! To me, it tasted like honey and that first taste was forever in my mind. Well, the lawn at our new house has an amazing ability to grow dandelions and as soon as I saw those pesky weeds shooting up out of my lawn I had an idea. I went to visit my favorite addiction site Pinterest and began to look for recipes for Dandelion Jelly. It didn't take me long before I had found a relatively easy-looking recipe and I vowed to make some this year.
The perfect day came and I had extra helpers (I was babysitting some older children) so I sent all of the children outside to pick me some dandelions.

So, to make your jelly, here is what you will need...

2 heaping cups of fresh dandelion petals (see note below - you'll need to gather about 4 cups whole flowers)
2 C boiling water
1/4 C well-strained, clear lemon juice
4 C sugar
3 oz liquid pectin (I've used SureJell and also Certo...both work well)
yellow food coloring (optional)

NOTE: Look for fully opened flowers, the bigger the better, for ease of preparation. Of course do NOT use any dandelions that have been sprayed with fertilizers or pesticides!
Once you have picked all your flowers (I made sure I just got the heads of the flowers, no stems) you will need to cut off the petals only. You will get some green in there...just hold the flower by the base and snip off the yellow petals. 
When you are done, you will have a nice fluffy bowl of yellow softness. :) Measure out 2 heaping cups of petals and pour the 2 C. of boiling water over them. Let them steep and infuse. You can let them sit for up to 24 hours but be sure to refrigerate if you are not using them right away. I let mine go until the water was room temperature, about 2 hours.
So, now that you have steeped your petals, strain them. I first strained them through a strainer to get the big pieces of petals separated and then put a coffee filter in my strainer to get the itsy bitsy pieces separated from the water. You are NOT using the petals, just the liquid.
To make the jelly, stir lemon juice (I have used lime also and it worked quite nicely!) and sugar into reserved infusion in a two-quart nonreactive or stainless steel pan. Bring to a full rolling boil that cannot be stirred down. Add the liquid pectin and continue to boil two minutes, skimming any foam that may rise to the surface. At this time, you can add up to 20 drops of yellow food coloring. This is done because the actual infusion is a brownish color and because you are making DANDELION jelly, having your jelly look yellow just makes sense. I added the coloring and it made my jelly VERY pretty. :)
While you are cooking your jelly, this is a good time to prepare your jars. Place jars and lids on rack in pan or stockpot deep enough to cover them with about two inches of water, bring to a boil, then reduce heat to a simmer, keeping the jars hot until ready to fill. I didn't have a rack to use so I just put a dishtowel in the bottom of my stock pot and that worked just as good.
Ladle quickly into jars to within about 1/8 inch from the top; clean each rim and threads of the jar as it's filled, and place flat lid and ring on each before filling the next. Screw band on tightly and invert jar on tea towel for about five to 10 minutes. Jars should seal and lids should pop shut within 10 minutes as they cool (I could actually hear mine popping). If they do not seal, you can place them in a hot water bath for 10 minutes or place in the refrigerator. Sealed jars will last up to one year in a cool, dry place and any unsealed jars can be kept in the refrigerator for up to 3 weeks.
Seriously, this stuff if amazing. It really tastes like honey and the lemon juice adds a very subtle yet pleasant lemon flavor. So, in case you haven't noticed I am a huge fan of all things food. Yep, I am a foodie. :) My husband and I both love to cook and we like to swap out cooking dinner responsibilities. In fact, my husband was asked if I ever make dinner for him. HA HA! Truth be told, the only reason he makes dinner some of the time is because he likes to do it and finds the craziest recipes to try. So, for this review I was sent all six of Citizen Chef's Cooking Sauces! The flavors are as follows:  Chipotle Adobo, Thai Coconut, Limone Garlic, Hawaiian Pineapple BBQ (Y.U.M.!!), Pan Asian Orange and Parmesan Primavera. Is your mouth watering yet? Boy oh boy...you have NO idea how much fun reviewing these sauces has been!
Because we are huge Chinese food fans, I chose to try the Pan Asian Orange sauce first. Upon opening the container of sauce and giving it a stir, I was immediately met with the amazing, aromatic smell of fresh oranges. Orange sauce has a bit of a tang to it and this sauce was seasoned perfectly!! You can really taste and smell the ginger and orange peel too.
So, to prepare my dinner all I did was cook diced chicken breast in a bit of olive oil. Once it was done cooking, I put it in a sauce pan with the Pan Asian Orange Sauce and simmered it together while I was cooking the rice. I think dinner took all of 15 minutes TOTAL to prepare. My husband arrived home and took a big whiff as soon as he walked through the door and was sooo surprised to see what I had made for dinner! It was delicious and tasted home made too. There was enough left over for my husband to take for lunch the next day and he enjoyed having home cooked food for his lunch.
Last week we had special meetings at church every night of the week and so we needed quick suppers. So, I decided to try the Parmesan Primavera and made Fettuccine Alfredo.
This made a DELICIOUS dinner for us as well. It was quick, easy and super yummy. I could have added chicken to make it even better but we were really short on time so I just cooked the pasta, threw some green beans on the side and voila! Dinner was served. There were no leftovers whatsoever and honestly, that means my family loved dinner! I don't mind leftovers but it is nice to know that I fix something my whole family enjoys that much.

Valentine's Day Fun!

Happy Saturday, everyone!! So, how was your Valentine's Day? Mine was wonderful. We actually did most of our celebrating the day before because I wanted my hubby to have cookies to take to work on Valentine's Day. It also was easier to do everything the day before so I could RELAX on the actual day. As promised, I have compiled some pictures of us doing our cookie baking and some other cute pictures from our day. Hope your day was special and that you enjoyed being pampered or did some romantic pampering. :)
So, cookie baking extravaganza started out with Hannah helping me make the cookie dough. Here she is, all ready to help!
As a mom, I have had to learn to relax ALOT when the children help bake. Yes, there will be messes and YES, those messes are totally cleanable. My OCD kicks in when they help but I know that it is part of making memories so sometimes, I just let them dig in and...well...help. :)
Next, we had to roll out the dough! Cut out cookies are fun to make but are a TON of work. I only do them a few times a year because they are fun for the children. Hannah loves to use alot of flour! :)
She was a VERY good helper. :)
Our cookies are ready for the oven! Can you believe that I had NO heart-shaped cookie cutters?!? Wow...I need to get one. :)
Next, we made home made frosting! I looked for a fluffy sugar cookie frosting and FOUND ONE here. Oh yeah...a good one too. :) It was easy to use and hardened really nicely all while staying fluffy!
Of course, you cannot make frosting for Valentine's Day Cookies without tinting it pink. I love how great this frosting was to work with!!
As with all baking adventures in this house, you HAVE to lick ANY beaters that get dirty and you better have two so they don't have to share! LOL!
These took about 45 minutes to frost and decorate. To make the chocolate shapes on the top, simply melt semi-sweet chocolate (I used semi sweet chocolate chips) and then put the melted chocolate in a bag. (Pastry or sandwich bag...cut a small corner of the bag so you have a fine tip). Next, "draw" your shapes onto wax paper and chill. They should peel right off the paper and then you can embellish your cookies or desserts. Just make sure you work quickly because the chocolate softens when brought to room temperature. 
They aren't perfect, but they are cute. Very cute. I am kind of attached to the chocolate embellishments too...may have to do that again. 
To end it all perfectly, hubby bought his daughter and I the most GORGEOUS flowers. The pink ones are Hannah's and the roses...yeah...are ALL mine! :) Woo Hoo! YAY for hubby. :) He did a great job. However, I don't need roses to know he loves me. He truly is a great guy!

So, I really stink at making rice and that is why I think I was so excited to hear about these steamers. Really? I can have rice that is cooked perfectly, mixed with some of my favorite ingredients, in 4 minutes??? Oh yes...and the flavors are fantastic!!
For this review I was given some free product coupons to try out some Minute Steamers. Because it was Christmas, I used one and gave the other ones away to some family members to try as well. I am a HUGE fan of fried rice and so that is the flavor I chose to review. These must be very popular because when I went to buy my Minute Steamers, the shelves where they are typically stocked were just about empty. This is a GOOD thing!
Cooking this particular product from Minute was a cinch. I was in a rush last night and needed a quick dinner for my children and I. (Hubby ate later). I popped some chicken nuggets on a baking tray and threw them in the oven for 8 minutes. Then, I put my Minute Steamers into the microwave for 4 minutes.
After the microwave beeped, I took out the bag and I had some of the best tasting fried rice EVER!! I love how all my favorite fried rice ingredients are included; eggs, peppers, carrots and more. This rice was sooo moist and tender, there wasn't a crunchy grain in it! My children enjoyed it as well...especially my son. This was a perfect side to put with their chicken nuggets too.
Not only do Minute Steamers come in rice mixes, but they also carry Macaroni & Cheese too! So, for those pickier eaters in your crew, they have something yummy for them as well. ~Christmas Morning Yumminess~ Drop Danishes

This is a favorite that I enjoy making not only at Christmas, but at other times of the year as well. It is quick, simple and VERY yummy too. As you enjoy the busyness of this season, take a minute to savor these tasty treats. Enjoy!

Drop Danishes

1/4 c. margarine (I used butter), softened
2 Tbsp. sugar
2 c. Bisquick
2/3 c. Milk
1/4 jam

GLAZE: 2/3 c. powdered sugar
1 Tbsp. warm water (I used cold milk)
1/4 tsp. vanilla

Cheese Filling:
4 oz. cream cheese
1/4 c. sugar
2 tsp. lemon juice

~*~*~*~*~*~*~*~*~*~*~*~*~*~*

Mix the margarine, sugar and Bisquick til crumbly. Add milk until dough forms. Beat 15 strokes and then drop by tablespoonfuls onto greased cookie sheets. Make a shallow well in the center of each and fill with one teaspoon of jam (or cheese filling). Bake at 425 degrees for 10-15 minutes or until golden brown. While warm, drizzle with glaze. ENJOY!! :)

King's Hawaiian Sweet Breads Review

I LOVE bread. Not only do I love bread, I also love rolls, bagels, buns and sweet rolls. Growing up, my mother would make the best refrigerator rolls for Thanksgiving dinner and they would not last long around our table. I think that the reason I love bread so much is that it is filling and you can do so much with it too. Because of all the different manufacturers out there, it is hard to chose a favorite brand of bread but today, I have one brand to introduce to you that I am just in love with!
King's Hawaiian is a bakery that was founded in Hilo, Hawaii by a Hawaiian-born son of Japanese immigrants...Robert Taira. His bakery didn't start out as King's Hawaiian though, but was named Robert's Bakery and from there, it evolved into King's Hawaiian. Here is a bit more about the history of this fantastic bakery...maker of some of the best sweet bread on the planet!

Since our humble beginnings in 1950 in a little town called Hilo, on the “big island” of Hawaii, we have remained committed to quality, integrity and Aloha Spirit. I have heard of King's Hawaiian Sweet Bread in the past, but have never tried it. I cannot tell you why I have never tried it but after today, I am sorry that I didn't! When I asked my mom about this brand, she raved about how it is the best bread she has ever tasted...WHY didn't I know about this before?? Needless to say, I was thrilled when given the opportunity to review King's Hawaiian and see for myself what I have been missing.
So, for this review I was sent a HUGE bag of King's Hawaiian breads and rolls to try. Upon opening my box of bread, I could smell it and my oh my...my mouth was watering!! I pulled out King's Hawaiian Sliced Bread, Round Bread, Mini Sub Rolls, Sandwich Buns, Hot Dog Buns, Hamburger Buns and dinner rolls.
My daughter joined me in the kitchen and saw me opening all the colorful packages. She shares her mommy's love for bread and promptly asked for a piece of bread and butter. The first thing I noticed was how thickly sliced the bread is. I love a good sized piece of bread and King's Hawaiian definitely knows how to slice their bread perfectly!
Hannah LOVED the bread, as did I. It had such a great flavor...just enough sweetness and not so soft that it squishes when you spread butter on it. Just look at that face...can you tell she is enjoying her special treat??

Right away, I knew I would have to make a special dessert with my King's Hawaiian Sweet Bread and so I chose to make Bread Pudding. Because the bread was sweet, I just knew it would make a fantastic addition to my bread pudding recipe! I wanted to share that recipe with you all. Enjoy!

King's Hawaiian Bread Pudding With Lemon Sauce
4 slices King's Hawaiian Bread, buttered and cut in squares
1/2 c. sugar
3 eggs
1 tsp. vanilla
1 c. milk
Cinnamon or nutmeg (opt.)

Place bread in bottom of 8"x 8" pan. Beat eggs and sugar; add other ingredients and pour over bread. Sprinkle with cinnamon or nutmeg. Bake at 300 degrees for 40 minutes or until set. Serve warm with Lemon Sauce.

Lemon Sauce:

1/2 c. sugar
1 tbsp. cornstarch
1 c. boiling water
2 tbsp. butter
3 tbsp. lemon juice
Pinch salt

Mix sugar and cornstarch, pour in boiling water. Boil 5
minutes, stirring constantly. Remove from heat and stir in
the butter and lemon juice. Stir until butter is melted.
Serve warm. Serves 4 to 5.
One thing that I loved about this bread was that it was super easy to slice. It didn't squish and mash together under the knife while I was slicing it and so it made for such a fluffy dessert! The sweet bread was SO perfect and added such a better flavor than plain white bread!!

The newest additions to the King;s Hawaiian line are the Mini Sub Rolls, Sandwich Buns, Hot Dog Buns and Hamburger Buns. The hot dog buns are sliced across the top, rather than the side which is pure genius...why hasn't anyone else thought of this?? It makes perfect sense to me and I am so glad that these buns are made this way!

The fluffy and sweet texture is perfect and makes a satisfying snack anywhere...anytime!
